NOTE: If using an instant pop maker (which I absolutely endorse) layer it as above and follow the manufacturers instructions for whatever else.
NOTE: If you only have plain flavored yoghurt, mix it with as much confectioners (powdered) sugar as you want and add some vanilla and stir it together…it works just the same. It does not matter if you use whole-milk yoghurt or low-fat. I prefer whole-milk because it makes it much creamier. Greek yoghurt or Skyr works just fine. You might want to add a little bit of milk or milk substitute though so that it isn’t quite so thick. I often use Greek yoghurt because it is healthier.
- Two and a half cups of strawberries without their tops, cut in half
- 2 Tbsp of superfine sugar
- I tsp of lemon juice
- 1 and 1/2 cup of vanilla yoghurt
Instructions:
- In a blender or food processor (a blender works best for me), combine the sugar, strawberries, and lemon juice. Process until completely smooth. (I just turned the blender on and let it run while I prepared the rest.)
- If using conventional ice pop molds, place 2 Tbsp of the yoghurt in each ice pop mold. Top each with 2 Tbsp of strawberry stuff. Continue layering the yoghurt and strawberry mixture until the molds are full.
- Dip a paring knife into each mold and make a few figure eight motions to swirl the flavor together. (If you can’t swirl it well, that’s fine. It’s not a big deal.)
- Cover and freeze until solid. Stick the popsicle sticks in when they are partially frozen. Freeze them for like 4 hours.
