Salted Caramel Pumpkin Waffles*

Ingredients:
  • 2 1\2 cups old-fashioned rolled oats
  • 1 cup mashed pumpkin
  • 1\8 tsp mineral salt
  • 2 teaspoons aluminum-free baking powder
  •  1 teaspoon baking soda
  • 1/4 cup natural sweetener
  • 1 cup plain 0% Greek Yogurt
  • 1 cup egg whites (carton of fresh)
  • 1 teaspoon vanilla extract
  • 2 tablespoons caramel extract

Directions:
  1. Preheat the waffle iron and spray it with coconut oil.
  2. Measure out 1\2  cup of oats and set aside. Grind the remaining 2 cups of oats to a four in a blender. Sir together ground oats, whole oats, and remaining waffle ingredients. 
  3. Scoop the batter into each waffle square and com according to the manufacturer's instructions.
  4. To serve: Spread butter on warm waffles and and lightly sprinkle salt over the top. Drizzle organic maple syrup nd enjoy!

Yield: About 4 waffles
