Yield: About 4 waffles
- 2 1\2 cups old-fashioned rolled oats
- 1 cup mashed pumpkin
- 1\8 tsp mineral salt
- 2 teaspoons aluminum-free baking powder
- 1 teaspoon baking soda
- 1/4 cup natural sweetener
- 1 cup plain 0% Greek Yogurt
- 1 cup egg whites (carton of fresh)
- 1 teaspoon vanilla extract
- 2 tablespoons caramel extract
Directions:
- Preheat the waffle iron and spray it with coconut oil.
- Measure out 1\2 cup of oats and set aside. Grind the remaining 2 cups of oats to a four in a blender. Sir together ground oats, whole oats, and remaining waffle ingredients.
- Scoop the batter into each waffle square and com according to the manufacturer's instructions.
- To serve: Spread butter on warm waffles and and lightly sprinkle salt over the top. Drizzle organic maple syrup nd enjoy!
