Russian teacakes/mexican wedding cakes

Great-Grandmother
Ingredients:

  • 1 cup butter or margarine
  • ½ cup powdered sugar 
  • 1 teaspoon vanilla
  • 2 ¼  cups of flour
  • ¾  cup finely chopped nuts
  • ¼  teaspoon salt
  • 1 cup Extra Powdered sugar for rolling balls in.

Directions:

  1. Preheat oven to 400 degrees
  2. Blend butter, vanilla, and confectioners’ sugar together.
  3. Slowly blend in flour, salt, and chopped nuts.
  4. Roll into small 1 inch balls, and put on a tray, un-greased.
  5. Put in in the oven for 8 minutes.
  6. When baked, take out, and carefully roll still hot cakes in powdered sugar. Coat cakes three times.

Yield: 24 cookies
Note: Do not over mix or add more moisture!
