NOTE: Our family calls them “evil cookies” because they’re so good you can’t stop eating them. They’re delicious frozen. If you accidentally burn the milk and cocoa mix (in the first point), the cookies will turn out crumbly. An easy solution is to use it as granola for your yogurt. Not that this has ever happened to me. 😉
- 1 1/2 cup sugar
- 1/3 cup cocoa powder
- 1/2 cup milk (you can use coconut, almond, rice, or regular milk. I’ve tried all of them and they all work.)
- 1/2 cup coconut oil or butter
- 1/2 cup nut butter (my favorite is peanut butter, cuz it’s the BEST, but some weirdos like almond butter)
- 1 tsp vanilla
- 3 1/2 cups oats (quick or regular)
Directions:
- In saucepan, boil sugar, cocoa powder, milk, and oil/butter, stirring constantly so it doesn’t burn
- Boil for 1 minute (start timing from beginning of good boil). Remove from heat.
- Add vanilla (if you add the vanilla soon enough you can watch the vanilla bubble, it’s pretty neat…if you like that kind of stuff). Also stir in the nut butter.
- Pour over large bowl with your oats in it. Stir, scoop onto greased cookie sheets. You can make the cookies any size that you prefer. Also, since these cookies are not going to be cooked, you can scoop them very close together.
- Chill in either the fridge or freezer until hard, or if you can’t wait, just eat them warm!
