Pumpkin muffins

Ingredients

  • 2 Cups
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/2 pumpkin puree
  • 1/2 Cup sugar
  • 1/2 Cup brown sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 1/4 cups chocolate chips

​Directions

  1. Preheat oven to 400º F.
  2. Soften the butter, then mix all of the wet ingredients together, plus the sugars, until smooth.
  3. Add all of the remaining ingredients.
  4. Put into muffin cups lined with paper liners. Fill muffins approximately 3/4 of the way full.
  5. Bake for 15-18 minutes. (Make sure that a toothpick can be inserted into the center and come out clean. )
Note: for mini muffins bake for approximately 10 minutes.
