Peach Cobbler

Ingredients: 
  • 2 3/4 cups sliced peaches
  • 1 1/2 cups sugar
  • 1/4 cup water
  • 1 egg
  • 1 tbsp shortening 
  • 1/2 cup milk
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Directions: 
  1. Preheat the oven to 375 F. 
  2. In a medium sized saucepan, combine the peaches, 1/2 cup sugar, and the water; bring to a boil, keep the peach mixture hot.
  3. Meanwhile, with a spoon, beat egg, 1 cup sugar and shortening until fluffy. Add milk; stir in flour, baking powder, and salt. Don’t forget to stir the peaches occasionally while you are making this. You don’t really want Burnt Peach Cobbler, do you? I certainly don’t. 
  4. Spread batter in a greased 9x13” pan. Pour the peaches over the batter. 
  5. Bake 30-40 minutes, or until tender. The batter will rise to the top in patches. 
  6. ENJOY! 

Tips: 
  1. It’s really good with vanilla ice cream, then again, what isn’t?
  2. It’s also really good with whipped cream. 
  3. You can substitute strawberries, blueberries, apples, or blackberries for peaches.

Yields: One 9x13” casserole pan. ​
