Mozzarella Marinara Chicken Pasta

Prep Time: 15-30 minutes
- 4 boneless skinless chicken breasts, chopped into small chunks
- 2 tbsp olive oil
- 2 cloves garlic
- 1/4 c diced fresh onion
- 4 c short-cut pasta
- 30 oz your favorite marinara sauce
- 3 c water
- Salt and pepper to taste
- 1 1/2 c mozzarella
- 1/2 c parmesan cheese
Directions:
- Heat the oil, garlic, and onions in a large pot or dutch oven.
- Sauté the chicken in the pot, then place it in a separate bowl.
- Put the sauce and water in the pot and bring to a bowl then lower to a simmer.
- Simmer the noodles in the sauce for roughly 10 minutes, or until fully cooked.
- Add the chicken, cheese, salt, and pepper. Cook for a few minutes until it is all hot and melty.
- Serve with parmesan cheese! Fresh basil and thyme sprinkled on top are optional.
