Mexican Rice

​Ingredients:
  • 1 can peeled tomatoes
  • 1/2 onion
  • 1 cup water
  • salt and cumin to taste
  • 1/2 cup cooking oil
  • 2 cups white rice (you can use brown, it just takes longer to cook)
  • 1-2 jalapeños, minced
  • 4 garlic cloves

Directions:
  1. Preheat the oven to 350f and toast the rice.  
  2. Dump the can of tomatoes, onion, water, salt, and cumin in a blender and puree until smooth. 
  3. Once the rice is toasted, heat the oil in a pan, and sauté the rice. Add the jalapeño and garlic to the rice.
  4. Pour the tomato mixture in the rice. 
  5. Cook until the rice is completely soft. (This will probably require a lot more water as the rice cooks) Depending on the amount of rice you use, this could take anywhere from 15 minuets to an hour. 
  6. Enjoy!

Notes:
If you like lime and/or cilantro, once the rice is completely cooked, you can squeeze the juice from 2 limes into the rice and add some cilantro.
