Gluten Free Brownies

Ingredients:
  • 6 tbsp butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbsp cocoa
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 8 oz chocolate chips

Directions:
  1. Preheat oven to 350.
  2. In a small saucepan over low, melt butter and sugar. Add chocolate and stir until smooth.
  3. Remove from heat and beat for 2 minutes with wire whisk. Add eggs 1 at a time then add the vanilla.
  4. Sift in the cocoa, cornstarch, and salt. Beat vigorously for one to two minutes. 
  5. Pour into 8x8 casserole pan and bake for 22-30 min.

Yield: About 8 bars.
