Tips:
Yields: One 9x13” casserole pan.
- 2 3/4 cups sliced peaches
- 1 1/2 cups sugar
- 1/4 cup water
- 1 egg
- 1 tbsp shortening
- 1/2 cup milk
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
Directions:
- Preheat the oven to 375 F.
- In a medium sized saucepan, combine the peaches, 1/2 cup sugar, and the water; bring to a boil, keep the peach mixture hot.
- Meanwhile, with a spoon, beat egg, 1 cup sugar and shortening until fluffy. Add milk; stir in flour, baking powder, and salt. Don’t forget to stir the peaches occasionally while you are making this. You don’t really want Burnt Peach Cobbler, do you? I certainly don’t.
- Spread batter in a greased 9x13” pan. Pour the peaches over the batter.
- Bake 30-40 minutes, or until tender. The batter will rise to the top in patches.
- ENJOY!
Tips:
- It’s really good with vanilla ice cream, then again, what isn’t?
- It’s also really good with whipped cream.
- You can substitute strawberries, blueberries, apples, or blackberries for peaches.
