Mozzarella Marinara Chicken Pasta

Ingredients: 
  • 4 boneless skinless chicken breasts, chopped into small chunks 
  • 2 tbsp olive oil 
  • 2 cloves garlic 
  • 1/4 c diced fresh onion 
  • 4 c short-cut pasta 
  • 30 oz your favorite marinara sauce 
  • 3 c water 
  • Salt and pepper to taste 
  • 1 1/2 c mozzarella 
  • 1/2 c parmesan cheese 

Directions: 
  1. Heat the oil, garlic, and onions in a large pot or dutch oven.
  2. Sauté the chicken in the pot, then place it in a separate bowl. 
  3. Put the sauce and water in the pot and bring to a bowl then lower to a simmer. 
  4. Simmer the noodles in the sauce for roughly 10 minutes, or until fully cooked. 
  5. Add the chicken, cheese, salt, and pepper. Cook for a few minutes until it is all hot and melty. 
  6. Serve with parmesan cheese! Fresh basil and thyme sprinkled on top are optional. 
  7. ENJOY!

Yields: A lot
