If you like lime and/or cilantro, once the rice is completely cooked, you can squeeze the juice from 2 limes into the rice and add some cilantro.
- 1 can peeled tomatoes
- 1/4 onion
- 1 cup water
- salt and cumin to taste
- 1/2 cup cooking oil
- 2 cups white rice (you can use brown, it just takes longer to cook)
- 1-2 jalapeños, minced
- 4 garlic cloves
Directions:
- Preheat the oven to 350 and toast the rice.
- Dump the can of tomatoes, onion, water, salt, and cumin in a blender and puree until smooth.
- Once the rice is toasted, heat the oil in a pan, and sauté the rice. Add the jalapeño and garlic to the rice.
- Pour the tomato mixture in the rice.
- Cook until the rice is completely soft. (This will probably require a lot more water as the rice cooks.) Depending on the amount of rice you use, this could take anywhere from 30 minuets to two hours.
