Note:
To be honest, the measurement of mashed potatoes and ham doesn't really matter. As long as there is enough for you and the ratio between ham and potatoes looks good to you, it should be fine. Also, the cornflakes are optional. Really the only thing they add is crunch.
- 1/2 cups finely chopped onion
- 2 tbsp butter
- 3 1/2 cups hot mashed potatoes
- 1 1/2 cubed fully cooked ham
- 1/4 tsp onion salt
- 1/8 tsp pepper
- 1/2 cup cheddar cheese
- 1/3 cup crushed cornflakes
Directions:
- Combine onion and 1tbsp butter. Microwave for 2 min or until tender.
- Add potatoes, ham, onion salt, and pepper; mix well. Transfer to greased baking dish. Sprinkle with cheese, cornflakes, and the remaining butter.
- Bake at 375 for 15 min. Enjoy!
