Mashed Fotatoes

From the Kitchen of:  Trim Healthy Mama cookbook
​INGREDIENTS
  • 3(6 oz) bags frozen cauliflower florets
  • 3 tbsp butter
  • 3 tbsp finely grated parmesan cheese
  • 3 tbsp heavy cream
  • 3/4 tsp mineral slt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • bacon bits
  • diced green onions

DIRECTIONS
  1. Place the cauliflower in a large pot with a little water and steam until tender. Transfer the cauliflower to a colander and drain out excess water.
  2. Place the cauliflower in a food processor and add the butter, cheese, cream, salt, pepper, and garlic powder, Process to a smooth puree.
  3. Scoop out and serve topped with the bacon bits and green onions.

Yield: 6-8 servings
