Loaded Mashed Potato Casserole

Ingredients:
  • 1/2 c. mashed potatoes
  • 1/2 c. milk
  • 8-oz of cream cheese
  • 8-oz of sour cream
  • 2 tsp dried parsley
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
  • 3/4 c shredded cheddar cheese
  • 6 slices bacon crisply cooked and crumbled

Directions:
  1. Combine all ingredients except cheese and bacon in a large mixing bowl.  Beat at a medium speed until smooth.  
  2. Spoon into a lightly greased 13"x9" baking dish; top with cheddar cheese and bacon.  
  3. Cover and bake at 350 for 30 minutes.  Then uncover and bake for 10 minutes, or until the cheese melts.

​Yield: 12 servings
