Lip-Smacking Mac 'N Cheese

Ingredients:
  • 2 tbsp chopped onion
  • 8 slices sharp shredded cheddar cheese
  • 2 2/3 cup dried corkscrew macaroni (rotini) or elbow macaroni
  • 3/4 cup milk
  • salt and pepper
  • 2 tablespoons grated parmesan cheese

Directions:
  1. On a cutting board cut the onion into small pieces (you should end up with 1/3 cup)
  2. Cook macaroni in the saucepan following the package directions, except add the onion with the macaroni so they can cook together. When macaroni is cooked remove from heat and drain.  
  3. Return macaroni back to the pan and stir in the cheese, milk, and a dash of salt pepper. When the cheese is melted, sprinkle the parmesan on top. 

Variations:
 - Add 1/2 cup frozen peas or frozen mixed vegetables, 1 cup sliced carrots or chopped broccoli to the pot with the uncooked onions and macaroni.
 - Add 1/2 cup chopped cooked ham, chopped pepperoni, sliced hot dogs, or chopped and cooked chicken with the cheese and milk.
