Wet ingredients:
- 2 1/2 cups rice milk or milk
- 1/2 cup unsalted butter
- 1 cup honey
- 2 eggs
- 2 tbsp grated lemon peel
- 2 tsp vanilla
- 4 cups whole wheat flour
- 2 tbsp baking powder
- 1 1/2 tsp salt
- 1 1/2 cups fresh or frozen blueberries
DIRECTIONS
- Combine the wet ingredients using a wire wisk.
- In a separate bowl, mix the dry ingredients.
- Add both mixtures together.
- Fold in blueberries.
- Pour batter into greased muffin pans.
- Bake at 375 for about 20 minutes
