Ingredients:
Potatoes
Vinaigrette (This was so hard to spell, but tastes AMAZING)
Directions:
Tip: If you want to make a main meal, just use bratwurst instead of bacon and use enough to fill you up. You can really change this up to make it suit your tastes. It’s an easy and recipe that is adjustable.
Potatoes
- 2 tsp olive oil
- 1/4 tsp salt
- 4 pounds potatoes cut into bite sized chunks
- Cooking spray
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh parsley
- 4 bacon slices, cooked and crumbled
Vinaigrette (This was so hard to spell, but tastes AMAZING)
- 2 1/2 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- 2 tsp olive oil
- 1/2 tsp black pepper
- 1/4 tsp salt
Directions:
- Follow the directions. LOL
- Preheat oven to 450 F.
- Combine first 3 ingredients. Arrange evenly on jelly-roll pan. Bake for 30 minutes or until tender. Let cool, combine potatoes onions, parsley, and bacon.
- While the potatoes cool, combine all the vinaigrette ingredients in a jar and shake it up, real well. Stir vinaigrette (this word is in here so many times, you would think I’d learn how to spell it...)
