Yield: about 8 cups
Note:
If you want to make a main meal, just use bratwurst instead of bacon and use enough to fill you up. You can really change this up to make it suit your tastes. It’s an easy and adjustable recipe.
Potatoes:
- 2 tsp olive oil
- 1/4 tsp salt
- 4 pounds potatoes cut into bite sized chunks
- Cooking spray
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh parsley
- 4 bacon slices, cooked and crumbled
- 2 1/2 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- 2 tsp olive oil
- salt and pepper to taste
Directions:
- Preheat oven to 450 F.
- Combine first 3 ingredients. Arrange evenly on a baking sheet. Bake for 30 minutes or until tender. Let cool, combine potatoes onions, parsley, and bacon.
- While the potatoes cool, combine all the vinaigrette ingredients in a jar and shake it up, really well. Stir vinaigrette into the potatoes.
