If you are the adventurous sort and like to try new things, try substituting half of the mayonnaise with balsamic dressing!
Make the deviled egg mixture in a ziplock bag by smashing all the egg yolks up in it. Simply cut a hole in the corner when you are done to pipe the stuff into the eggs.
If you want a dairy free option, simply replace the 2 tablespoons of milk with 1 more tbsp of mayonnaise and 1 tbsp of water. Also, If you boil your own eggs make sure you add some vinegar and salt to the water it really makes it easier to peel.
It is also MUCH nicer to buy pre-peeled hard boiled eggs. Unless you hate your thumbs and want to cut them, up you should definitely buy pre-peeled.
- 12 hard-boiled eggs (I always boil a few more eggs, eat the whites, and add in the yolks to increase the filling mixture!)
- 1⁄2 cup mayonnaise
- 2 tablespoons milk or 2 tablespoons half-and-half
- 1 teaspoon dried parsley flakes
- 1 large very finely chopped green onion (optional)
- 1⁄2 teaspoon ground mustard powder
- dried dill weed to taste
- salt to taste (I use seasoned salt)
- 1⁄4 teaspoon paprika (plus more for dusting the eggs)
- a dash of ground black pepper and garlic powder
Instructions:
- Slice the eggs in half lengthwise; remove the yolks, and set whites aside.
- In a small bowl, mush yolks well with a fork, leaving no small lumps and add the mayonnaise and milk.
- Add all of the spices and mix well, then add the onion.
- Spoon or pipe egg yolk mixture evenly into the whites.
- Sprinkle with paprika.
- Cover tightly with plastic wrap.
- Store in the refrigerator until ready to serve
