Cottage Cheese pancakes

​​INGREDIENTS
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/2 teaspoon vanilla extract
  • 1 Tablespoon sugar
  • 1/8 teaspoon salt
  • 1/2 cup all purpose flour
  • 1/2 cup cottage cheese
  • 2 Tablespoons unsalted butter
  • 2 tablespoons of oil (grapeseed, safflower, peanut or coconut oil)

DIRECTIONS
  1. Put the eggs, sour cream, vanilla sugar, salt and flour into food processor until smooth. Add the cottage cheese and mix it just until mixed.
  2. Heat 1 T each of the butter and oil in a 10-12 in nonstick skillet. Start cooking the pancakes. ​

Note: Despite the name our family really enjoyed these pancakes. It is also very good with Blueberry Compote. :) Also, our family quadrupled this recipe for 7 people.
