Note: Despite the name our family really enjoyed these pancakes. It is also very good with Blueberry Compote. :) Also, our family quadrupled this recipe for 7 people.
- 2 large eggs
- 1/4 cup sour cream
- 1/2 teaspoon vanilla extract
- 1 Tablespoon sugar
- 1/8 teaspoon salt
- 1/2 cup all purpose flour
- 1/2 cup cottage cheese
- 2 Tablespoons unsalted butter
- 2 tablespoons of oil (grapeseed, safflower, peanut or coconut oil)
DIRECTIONS
- Put the eggs, sour cream, vanilla sugar, salt and flour into food processor until smooth. Add the cottage cheese and mix it just until mixed.
- Heat 1 T each of the butter and oil in a 10-12 in nonstick skillet. Start cooking the pancakes.
