Note: You can substitute the seasoning blend for approximately one cup of chopped celery, onion, and carrots. The seasoning blend just makes it easier. Also, this soup is our family's TOP favorite soup recipe...It is AMAZING!!
- 21/2 pounds boneless skinless chicken breasts or thighs
- 2 quarts chicken broth
- 1 (10 oz) can Ro-tel-style diced tomatoes with green chilies
- 1 (14.5 oz) can of diced, fire roasted tomatoes
- 1 (10 to 12 oz) frozen small-cut seasoning blend (see note)
- 1 tsp Mineral Salt
- 1 tsp black pepper
- 1 tsp onion powder
- 2 to 4 garlic cloves minced
- 1 tsp chili powder
- 3/4 to 1 tsp chipotle powder
- 1 (8 oz) package cream cheese
Directions:
- Put all the ingredients (except the cream cheese) in a crockpot. Cover and cook on high for 6 hours. Remove 1 cup of the hot broth and place it in a blender with the cream cheese. Blend until smooth, then stir into the crockpot.
- Remove the chicken and shred on a plate with 2 forks. return to the pot, and stir well to combine. Enjoy!
