- 2 eggs
- 1 1/4 t baking powder
- 1 1/4 t oil
- 3/4 t salt
- 1/4 t pepper
- 5/8 C of milk
- Mix all the ingredients together then set them aside.
- Then get a muffins pan and oil each of the sections (no muffin wrappers needed). Put whatever topping you want with the egg muffins in the bottom of each section (I recommend having hash brown, cheese, and some kind of vegetable as toppings).
- Scramble the egg, pour them over the topping, then stir the ingredients together in each section.
- Put them in the oven and cook @ 375 degrees for 20-25 minutes.
